What Is It and When Do You Need It?

Baker’s percentages make bread formulas easy to compare. Two recipes may look very different in grams, but share the same hydration and salt level. Professionals write formulas this way.

List your ingredients and the flour weights, and read the percentages.

How to Use This Tool

  1. Type one ingredient per line, with grams.
  2. Include every flour (lines beginning with flour).
  3. Optionally enter the flour weight to scale to.
  4. Press Calculate.

How the Calculation Works

All lines whose name contains flour are added to give the flour weight. Each ingredient is divided by that weight and multiplied by 100. Hydration is the water percentage. When you scale, every weight is multiplied by new flour weight ÷ old flour weight.

Worked Example

Flour 500 g, water 350 g, salt 10 g and yeast 5 g is 100%, 70%, 2% and 1%. Scaled to 1,000 g of flour, the weights are 1,000, 700, 20 and 10 g.
